Anything Quorn (Pronounced Corn) The meat crumbles are sooooo good!
Smoothies-I use Soy Yogurt, Banana, Frozen Fruit, and Almond Milk if it needs a little thinning
Waffels-I put peanut butter and slice a banana on top, It's sooooo yummy!!!
If you've got a suggestion, please let me know! I'm trying to add new thing to my line up! LOL

Tonight's dinner and stuff
So, looking for something really simple to make for dinner tonight, I tried Gardein Buffalo Wings. We'd had the Mandrain Orange Crispy Chick'n last week and that was really good!!!
The Buffalo Wings were GREAT!!!!!!!!! Child #1 is at work, #2 opted for fruit salad instead so #3 and I had the wings. He didn't like them, but that doesn't surprise me, he doesn't like much I make. :-p
Because I'm doing this for my health, I'm letting each of the kids try their own version. #1 is only vegan on the nights he's here for dinner. #2 likes cheese too much to give that up, but has requested to give up meat (again)(like I would have trouble honoring that request! LOL!) and #3 has opted for no dairy. He's had a particularly rough time between recurring ear infections as a baby, asthma as a young child and he still has frequent resp issues at 11. After my first week of Go Vegan, I noticed that he'd stopped coughing. Last Sunday, pizza at my mom's, Monday he wakes up coughing again.
Sooooo after a week of school lunches that include milk at lunch, he and I have decided that he will be bringing his lunch from now on. He's dedicated to giving dairy free a chance and I couldn't be happier about his choice! So many of the "side effects" of ingesting dairy are displayed in my son. I'm really hoping that he sees a difference and continues on his own.

The beginning
So, I started the Vegan thing as an experiment, just to see what would happen. I figured, worst case, I'd get a lot of crap out of my system and I might lose a few pounds to boot. What's happened as a result of how I've eaten the last two weeks is nothing short of amazing!
Things that have changed
Weight
I'm not sure how much I've lost as I used to have a crappy scale. I've had two people say they can see a difference in my face, so maybe.... I bought a decent scale on 02/16/2011 and have lost 2 pounds in the four days since.
Medical
This is where I've seen the most drastic changes. I have IBS, it had been acting up for months. I haven't had one flare up in the past two weeks. I've chronic sinus issues, they are gone, as long as I stay off dairy. I'd had an ear infection when I started Go Vegan, 10 days of anti-biodics and I was still in pain. Four days off dairy and the pain was gone and I could breathe again!! Even my face seems to be clearing up!
Energy Level
Again, a drastic change. I often have trouble staying awake in the evenings after work. Since Go Vegan, not only have I been able to stay awake longer, but I've been sleeping better too!
I plan to use this blog to follow my progress. While I'm not making Vegan a strict life style, I do plan to stick to it. I feel lighter, cleaner and healthier since starting and can't imagine going back to feeling like I used to!
